Originally from the South-West of France, Jean Sevegnes has sharpened his talents in the starred kitchens of the greatest chefs. He started his career with Alexis Pelissou in Cahors, then Alain Ducasse in London and Louis XV in Monaco with Franck Cerutti. He joined Bernard Pacaud’s Ambrosie in Paris. Strong personalities who give you a taste for excellence and surpassing yourself. It is alongside Didier Elena that he will continue his way to Les Crayères in Reims, La Chévre d’Or in Eze and Adour New York. Back in France for Hélène Darroze as a corporate chef before taking charge of Ladurée’s international kitchens.

It was after meeting with Roxane Thomas, maître d’ at Hélène Darroze’s**, that the idea of a place of their own, open from morning to evening, was born: “a den of friends, bon vivants, people of passage who will taste together delicious and warm moments”.

Thus the roles are shared, she welcomes, he prepares the plates, both of them participating with all their talent in this beautiful culinary experience.

Three elements make up their plates: a meat or a fish, a side dish, a sauce. Quite simply. The chief banishes ornament and fantasy. Everything is cooked in the purest sense of the word.

Jean Sevegnes defends an ethical, ecological cuisine, the fruit of a sustainable and healthy agriculture. He chooses producers and suppliers like him who are concerned about the environment and ardent defenders of the best of the local culinary tradition. The commitment is also reflected in the list of beverages, wines and alcohols, the vast majority of which are French. Coffee and sugar follow the same virtuous path, organic and fair trade, in recycled and recyclable packaging.

Le Café des Ministères

In the heart of the seductive 7th arrondissement of Paris, Le Café des Ministères offers a generous cuisine, with classic but contemporary accents. All the dishes are prepared with French products, resulting from a reasoned agriculture. Open all day, from Monday to Friday, you can also enjoy French wines, soft drinks and alcohols or sip an organic fair trade coffee. Roxane and Jean, the owners, opt for short circuits and know each of their suppliers.
