The highly-talented Jessica Préalpato, who was born into a family of pastry chefs, has since 2015 been working alongside Romain Meder at Alain Ducasse’s Plaza Athénée restaurant on the concept of “Naturality”. She is the creator of a new type of dessert-making called “desseralité”, where being mindful of the seasons, producers and the enrivonment is key.Her visionary creations led to her being crowned the World’s best pastry chef 2019 at the World 50 Best Restaurant Awards.
