This lover of good products studied at the hotellerie school of Souillac, before joining the brigade of Philippe Garret, Pain Adour and Fantaisie. In 2008, he took his first place as sous chef with Johann Leclerre MOF in his establishment la Maison des Mouettes. Arrived in the capital in 2012, he’s part of Emile Cotte’s team, 110 Taillevent before joining the house Alain Ducasse where he will be chef at Champeaux. Today he wears his own colors in his restaurant l’Inédit.
His philosophy; a gourmet gastronomy around dishes of French tradition. These are generous meals that are served to the guests for the sake of lightness. Menu: pâté in crust, lamb in truffle crust and foie gras, The soufflé Cointreau, marmelade of orange and bitter ice. A fine food that honors the region.
