Sébastien Monceaux has been head chef at Fauchon, the famous Parisian delicatessen, for 13 years. Born into a family of artisan butchers, he possesses an innate gift for authentic produce, which he sources on his travels and then transforms into the creative, stylish dishes expected by Fauchon’s demanding clientele.
