Thierry Marx

Thierry Marx, one of the most prestigious French chefs, was trained by the best chefs in France including Claude Deligne, Joël Robuchon and Alain Chapel.

He was awarded a first Michelin star in 1988 at Roc en Val in Tours in 1991 and another at Cheval Blanc in Nimes. The chef joins the Mandarin Oriental, in Paris in 2011 after 10 years in Gironde at Cordeillan-Bages Castles of the Relais & Châteaux chain, where he has gained 2 stars in 1999. In 2006, he was elected Chef of the Year by Gault Millau the magazine Chef. We can then discover Thierry Marx in the TV show Top Chef where he plays the role of a member of the jury evaluating young chefs. In 2014, he is recognized Chef of the Year by the Pudlo Guide.

With a creative and innovative approach to cooking, Thierry Marx is inspired by France, but also through his many trips to Asia. His career has taken him in Australia, Hong Kong, Thailand and Japan. Offering avant-garde textures and flavors, Thierry Marx defends a kitchen that doesn’t know conflict between tradition and innovation. He offers unforgettable dinners thanks to its style and unique expertise in his two restaurants Mandarin Oriental, Paris: Sur Mesure by Thierry Marx (2 stars in the Michelin® Guide since 2012) and Camellia. Also appointed Director of the Restoration, he is responsible for overseeing the room and the hotel bar.

Thierry Marx invests himself outside of his Parisian kitchens by creating in 2009 the mobile cooking school with the city of Blanquefort (Gironde), where he hosts for short courses, people with social problems whom have the project of opening Street kitchen projects. In 2012, he opened a second school in the 20th arrondissement of Paris, "Kitchen User Manual(s)" for the rapid formation as a cook. Then in 2013 he developed this training center by creating the bakery section and in January 2015, he includes a table service training. In recent years, he started teaching cooking classes for inmates in detention centers. Thierry Marx also offers its services to Restos du Coeur, where he works on cooking workshops and fight against illiteracy. Great lover of Japan, he regularly travel there to unwind and practice martial arts, notably kendo and judo.
In June 2016, Thierry Marx realizes one of his childhood dreams by opening its first bakery in Paris 8th district. It embodied the fusion between the worlds of cuisine and bakery in a fast casual spirit. He joins the baker Joel Defives (Meilleur Ouvrier de France) in order to offer the best of French craftsmanship.

In 2013, Thierry Marx has been promoted in the order of the Legion of Honour in rank of Knight.
