Barely 30 years old, the experience of Victor Mercier is already rich in knowledge, know-how and encounters which formed this young passionate about stoves for whom the vocation of becoming a cook one day imposed itself on her. even from the age of 13. His thirst for learning and the taste for learning continued to follow him, whether during his studies at the Ferrandi Paris school or during his internships that he did in France – at Ze Kitchen Galerie and at Astrance in particular – or abroad in Denmark or Australia. But it was his time at Le Sergent Recruteur alongside Antonin Bonnet that the click was made. He discovers a committed restaurant that only uses products from permaculture. Victor understands that the future of catering lies in responsible and engaged cuisine. This position leads him to join the ranks of Top Chef for a season and this experience reinforces his idea of finally opening his own place. It was then that he created FIEF – Fait Ici En France. The concept ? Use only metropolitan products on the plate and in the glass. Also products like chocolate and coffee will be absent from the menu. A restriction which, far from being a constraint, offers an incredible space for creativity.
